How our course planning works
To ensure you can secure your place in good time, we make our scheduling as transparent as possible for you:

We publish the dates online approximately 6–8 weeks before the course begins. At this stage, the dates serve as a preview; binding bookings are not yet possible.
BOOKABLE (marked in green):
The dates will be activated no later than 4 weeks before the course starts. From this point on, you can easily and bindingly book your place.
This ensures that all participants have sufficient lead time and that you are guaranteed to find the right course for you.

Wagyu 3.0 „Konnichiwa, Mekishiko“ | October 8th, 2026
Taco-Bao meets Japan
When Japan meets Mexico, the result is a BAO shop you won’t soon forget.
On October 8th, 2026, we’ll be presenting our A5 Wagyu from Kagoshima Prefecture in a whole new way. Handmade charcoal taco baos meet Japanese precision, a blend of flavors, and plenty of umami.
Look forward to our Wagyu Taco Bao with authentic A5 Wagyu, jalapeño-wasabi mayo, pickled shallots, cucumber-avocado salsa, cilantro, and lime, served with baby corn.
For those who like it a little spicier, we offer our Jerked Miso Chicken Taco Bao, featuring jerked miso chicken, jalapeño-wasabi mayo, pickled shallots, cucumber-avocado salsa, cilantro, and lime.
For those who prefer bowls over bao, these flavors are also available as Wagyu Don or Jerked Miso Chicken Don, served over sushi rice. These are joined by a Japanese classic: Unagi Kabayaki Don—glazed Japanese freshwater eel over sushi rice with house-made ginger, authentic wasabi from Nagano, sesame seeds, and kabayaki sauce.
And since a little extra Wagyu never hurts, our “Extra Beeef onllyyy” is, of course, a must-have.
As always, all dishes are grilled over special Hinoki oak binchotan charcoal from Hyuga in Miyazaki Prefecture.
For a sweet finale, we serve a Classic Egg Tart, mizu-san style—a delicate egg custard encased in crispy puff pastry.

To Martini or "NOT" to Martini Ramen - Gachō Dashi | November 5th, 2026
Martini or “NOT”-Martini Ramen
When fall arrives and it starts to get cooler outside, it’s time for a bowl of ramen to warm your body and soul.
On November 5th, 2026, we’ll be celebrating a special classic and, for the second time, combining Austrian Martini tradition with Japanese ramen culture.
To start, we’ll serve some delicious tsukemono—pickled red cabbage, cucumber, and daikon radish—marinated in wasabi ponzu and sesame.
Then things get really hearty: Our Martini ramen creation combines tender char siu made from organic goose with a deeply aromatic miso-lotus mushroom soup. It’s served with handmade, wide ramen noodles, chestnuts, pickled shiitake mushrooms, scallions, ra-yu (chili oil), and a classic nitamago (egg).
Of course, we couldn’t leave out a vegetarian version. Our “Not Martini” ramen replaces the goose with aromatic char siu made from organic pumpkin and combines it with miso-lotus-mushroom soup, ramen noodles, chestnuts, shiitake mushrooms, scallions, ra-yu, and nitamago.
For a sweet finale, enjoy a matcha-vanilla cheesecake with seasonal fruits.
An evening where Austrian autumn meets Japanese comfort food.

Luxury X-mas Special | Dezember 10th &11th 2026
When Christmas Meets mizu-san
Christmas should be festive. But it should also be full of surprises.
On Dezember 10th and 11th 2026 We invite you to a very special winter evening at Hotel Kai 36.
Our “Luxury Ramen X-mas Special” combines the finest ingredients, Japanese craftsmanship, and winter flavors into an extraordinary culinary experience.
The meal begins with A5 Wagyu carpaccio, black hay salt, dried egg yolk, shiitake mushrooms, and Szechuan oil. This starter is complemented by aburi sashimi made from tuna belly with yuzu sauce and wasabi.
Next, the spotlight turns to two extraordinary ramen creations.
The BBQ Wagyu Black Garlic Ramen combines BBQ A5 Wagyu from Kagoshima with a deeply aromatic, fermented black garlic broth. Handmade, wide ramen noodles, pak choi, crispy shallots, gold leaf, winter truffle, scallions, nitamago, and sesame-Wagyu oil come together to create a festive bowl bursting with umami.
The second variation combines BBQ tuna belly with fermented black garlic soup, pak choi, handmade ramen noodles, crispy shallots, gold leaf, winter truffles, spring onions, nitamago, and Ra-Yu chili oil.
And since Christmas at mizu-san also has its sweet side, we’ll wrap things up with a chestnut-citrus Swiss roll with mulled wine sabayon.
A Christmas menu for everyone who likes to celebrate Christmas a little differently. Elegant, Japanese-inspired, and filled with the spirit of mizu-san.

Cooking class: Maki and more – beginner sushi course
Immerse yourself in the fascinating world of Japanese cuisine and learn the art of sushi preparation from scratch! Our beginner sushi course “Maki and more” offers you the perfect opportunity to learn the basics of sushi making and roll your own first creations.
Course content:
- Preparing sushi rice: discover how to cook the perfect sushi rice and refine it with a specially made marinade. Rice is the centrepiece of every sushi dish and we show you how to prepare it properly.
- Homemade sushi ginger: Learn how to pickle fresh sushi ginger yourself. This is not only served as a side dish, but also provides the necessary freshness between the individual sushi bites.
- Nikiri soy sauce: Refine your sushi creations with a homemade Nikiri soy sauce. This sweet soya sauce, which is traditionally brushed onto the sushi, gives your rolls that certain something.
- Different maki rolls: Familiarise yourself with the different techniques and fillings used for maki rolls. From the classic hoso maki to the Californian California roll and the sumptuous futomaki – we will show you how to prepare each roll to perfection.
Who is this course suitable for?
This course is aimed at all sushi lovers who would like to try their hand at making sushi themselves. Whether you have little or no experience in preparing sushi, you’ve come to the right place!
You are also welcome to bring Tupperware boxes or similar to take along your home-made creations that cannot be eaten on site.
