Degustazione Mare | A Culinary Journey Between the Mediterranean and Japan
On July 17th, 2026, Hofgasse 4 in Graz once again became a gathering place for all those who love exceptional cuisine. In collaboration with A.G. Brigante & Co. and mizu-san by Daniel, a flying dinner was created that harmoniously combined the lightness of Mediterranean cuisine with the precision of Japanese cuisine.
Under the theme “A Culinary Journey Between the Mediterranean and Japan,” our guests were treated to an evening full of excitement, high-quality ingredients, and creative craftsmanship. Each course told its own story and demonstrated how effortlessly two of the world’s most fascinating culinary cultures can blend together.
The meal began with a delicate prawn carpaccio, enhanced with fresh sea urchin and an aromatic ponzu sauce. This was followed by calamari “Carbonara,” in which Italian tradition met Japanese sophistication, with smoked tuna adding a surprising depth of flavor.
Another highlight was the homemade pasta filled with Pacific mazzancolle. Prepared with great finesse and perfectly complemented by the Japanese-inspired flavors of mizu-san, the dish combined Mediterranean warmth with Far Eastern elegance.
The evening reached its culinary highlight with the creamy miso risotto with octopus. Rich umami, subtle roasted notes, and the tender texture of the octopus came together to create a dish that delighted many guests.
Our homemade pineapple tarts provided a sweet finale, bringing the evening to a close with a pleasant lightness and putting smiles on the guests’ faces once again.
Those who opted for the carefully curated wine pairing were able to experience how select Italian wines perfectly complemented each dish and elevated the dining experience to a whole new level.
In addition to the culinary highlights, it was above all the special atmosphere that made this evening so unforgettable. Personal conversations, the close interaction with the chefs, and the passion of everyone involved turned the flying dinner into a shared experience that went far beyond a traditional meal.
