Sakura Ramen – The Awakening of the Taste Buds

As spring slowly sets in and the first warm rays of sunshine bathe Graz in a new light, a special time begins at Hotel Kai 36 as well. We celebrated the start of the 2026 season with our Sakura Ramen—light, fresh, and full of life.

This afternoon was all about a fresh start. Inspired by Japanese cherry blossoms, we created a ramen dish that captured the lightness of spring while surprising us with its depth and character.

The focus was on an aromatic, vegan soup base made from mushrooms, lotus root, and fresh spring vegetables—clear, delicate, yet intense in flavor. A base that demonstrates just how powerful plant-based cuisine can be when prepared with respect and expertise.

The dish was complemented by homemade nori ramen noodles, a perfectly marinated nitamago (the popular ramen egg), fresh white asparagus, aromatic wild garlic tare (the soup’s flavor base), and the subtle heat of homemade Szechuan oil. The dish was complemented by Tao Pok (a specially prepared and marinated tofu) and negi, which added balance and texture to the whole dish.

For those who preferred something a little heartier, an optional miso chicken dish rounded out the dining experience—tender, flavorful, and perfectly integrated into the dish.

For a sweet finale, there were hand-shaped pineapple cookies—a true classic of Asian cuisine, especially for the Lunar New Year.

The atmosphere was relaxed, lighthearted, and yet full of energy—an afternoon that showed just how much emotion can be packed into a single bowl.

Sakura Ramen was more than just a dish—it was a feeling. A taste of what 2026 has in store.

  • A deep, malty Asahi beer with caramel notes
  • IPPAI Lemon Sour: Tantalizing Lemon & Japanese Shochu

It was an evening that showed just how much heart, time, and true craftsmanship can go into a single plate. An evening in which Styrian tradition and Japanese precision did not simply coexist, but merged together—warm, aromatic, and in perfect harmony.
