1st anniversary – mizu-san – Wagyu in Leechwald
On August 24, 2025, we opened a very special chapter: the one-year anniversary of mizu-san. Together with friends and companions, we celebrated this special moment in Leechwald with an exclusive menu dedicated to Wagyu and Japanese food culture.
Under the motto “Wagyu in Leechwald,” our guests enjoyed an exclusive fine dining experience in a small group, characterized by flavors, craftsmanship, and passion. The meal began with three exquisite sushi snacks: delicate hosomaki with organic cucumber, creamy uramaki with avocado and inari age, and artfully arranged battera sushi with spicy salmon and tuna, shiso leaf, pimientos de padrón, and fresh lime zest, accompanied by wasabi, homemade ginger, and nikiri soy sauce.
The menu then unfolded in all its diversity. Delicately seared salmon sashimi aburi with spring onions, togarashi, sesame oil, pea sprouts, and sesame seeds provided the first umami moment, followed by an exquisite A5 Wagyu carpaccio with dried egg yolk. Fresh sea bass of sashimi quality was paired with an aromatic curry yuzu sauce and spring onions, while a fluffy tamagoyaki with wafer-thin katsuobushi reinterpreted the Japanese classic. A miso soup, in which scallops, wakame, and a hint of sake were blended together, added a touch of depth.
The next highlight was our signature “marble bao buns,” filled with A5 Wagyu beef from Kamiciku in Kagoshima. The meat was cooked on an authentic Japanese binchōtan grill and finished with kabayaki sauce. We also served juicy teriyaki chicken, which was also grilled over the intense binchōtan embers.
These main courses were accompanied by homemade condiments that subtly complemented the flavors: a refreshing cucumber salad with gomadare, a sweet and spicy daikon salad, spicy coleslaw, shallots pickled in Japanese plum vinegar, aromatic BBQ corn on the cob with miso butter, slow-braised cherry tomatoes, and grilled and marinated shiitake mushrooms.
This evening combined fine dining with Japanese food culture and friendship in a way that moved us deeply. For us, this anniversary was not only a look back on a fulfilling first year, but also a look ahead to everything that is yet to come.
