Partner Event: BAOchladen – Hotel Kai36 & mizu-san Pop-up
BAOchladen Pop-up: Two evenings full of smoke, steam, and enjoyment
On August 8 and 14, 2025, Hotel Kai 36 in Graz teamed up with mizu-san by Daniel to transform itself into a unique culinary pop-up. Under the name “BAOchladen,” we presented homemade marble bao buns that delighted guests not only visually but also in terms of taste.
Shortly after the start at 5 p.m., the area around our kabayaki grill, café, and courtyard filled with curious guests attracted by the aroma of the original Japanese hinoki binchotan charcoal grill. The combination of A5 Wagyu sirloin from Kagoshima, marbled, tender, and juicy, served on a soft marble bao bun with spicy mayo, shiso, lime, and pickled shallots, ensured moments of pure enjoyment and satisfied faces.
The Kabayaki Chicken Bao was no less popular: the chicken was perfectly glazed and grilled and served with fresh Asian slaw, sesame seeds, pickled shallots, and aromatic Kabayaki sauce.
The dishes were accompanied by exceptional drinks that perfectly complemented the Asian street food flair: the fruity and fresh “Matcha Nashi Pear Calpis” and the aromatic and sweet “Osmanthus Oolong Tea” with dates, peach gum, white snow fungus, and brown sugar syrup.
The sweet finale was a refreshingly light dessert: mango sago made from sun-ripened Alphonso mangoes with lime, creamy coconut milk, and delicately tart pomelo—a perfect ending that brought summer to the palate.
The rush was overwhelming: by 6:30 p.m., all of our delicacies were completely sold out. The enthusiasm and high demand overwhelmed us and showed us how much this concept has captured the hearts of our guests.
Both evenings were characterized by a relaxed atmosphere, great food, and an ambiance reminiscent of the lively street markets of Asia. For our guests, it was a culinary experience they will not soon forget; for others, it was a reminder of faraway countries; and for us, it was proof that simple bao buns are more than just a trend: they are a genuine part of our culinary culture.
