Bollicine Croccanti – An evening full of exciting moments of pleasure

On July 25, 2025, Hofgasse 4 in Graz once again became a meeting place for connoisseurs and lovers of fine cuisine. Under the title “Bollicine Croccanti,” A. G. Brigante & Co., mizu-san by Daniel, and the young pasta artist Manuel Tocci presented a flying dinner in a class of its own.

The evening was marked by sparkling aromas and creative cuisine, accompanied by an impressive selection: nine craft beers from 32 Via dei Birrai and five fine Prosecco DOCG Valdobbiadene wines from Progettidivini, presented by Loreno and Martina. The result was a sensory journey through hops, perlage, and culinary art.

The menu – 9 culinary emotions:

1. Ostrica Mignon, Lime Gel, Sea Grapes, Borage Cress
2. Bluefin Tuna & Yellowtail, perilla, Aji Criolla Sauce, Sesame Cone
3. New Caledonia Blue Prawn Tempura, Pineapple Aioli
4. Tortino di Pasta, El Capricho Beef Pastrami by José Gordon
5. „Mozzarelle di Pane“ by Master Renato Bosco from Italy, Tentacolo di Polpo, Giardinia Giovanni by Morgan, Goma Dare
6. Spaghetti Maxi Dei CAMPI in Red Wine
7. Savracoscia Faraona, Cepes, Castagne, marinated with 32 Beer Nectar, Mushroom Ragout
8. Melone Giallo au gratin
9. Sudachi-Yuzu-Ricotta Mousse, roasted Nuts, Pea Cress, Olive Oil, Sea Salt

There was a choice of different tasting packages – from Prosecco to craft beers to a mix for those who love variety.

“Bollicine Croccanti” was more than just a flying dinner—it was a celebration of flavors, creativity, and sparkling enjoyment. The successful combination of refined dishes, fine drinks, and the warm atmosphere at A. G. Brigante & Co. made the evening unforgettable.
