Orient Express – next stop: Italy

On Friday, 27 June 2025, we had the pleasure of opening an extraordinary chapter in our culinary event series at A.G. Brigante & CO in Graz. Under the title ‘Journey of Perfect Flavour’, the evening not only brought together excellent cuisine and refined ingredients, but also people who share a passion for enjoyment, craftsmanship and origin.

This flavourful expedition was once again led by mizu-san by Daniel, whose roots lie in Japanese cuisine, and Manuel Tocci, the young pasta virtuoso from Semplicemente a mano, who provided authentic flavours with his Bolognese signature.

But this time we had the honour of having two very special guests on board:

  • Morgan from La Giardiniera di Morgan, an innovator in the modern interpretation of the Italian vegetable and preserving tradition, whose products had a decisive influence on the flavour of the evening.
  • Martina from the Progettidivini winery, who presented a fine line of Prosecco Valdobbiadene DOCG with great passion and expertise and provided the perfect liquid accompaniment to every course.

The menu – 12 courses that told stories:

  • Burrata, semi-dried tomatoes, mozzarella foam, basil pesto
  • Branzino sashimi, purple onion, soya glaze, grissini
  • Cold soba with smoked swordfish, daikon sudachi sauce
  • Bacalao-Creme à la Morgan, focaccia, salsa di Luciana, rosmary
  • Tuna tataki, La Salsa dell’Orto, premium olive oil
  • Broccoli risotto, guanciale
  • Goose breast mi-cuit, mostarda, orange glaze, sardine panettone
  • Gnocchi, chickpea cream, seafood
  • Calamarata, tomato ricotta, prawn tartare
  • Wagyu aburi, white asparagus, miso hollandaise
  • Salty sesame cono, hazelnut cream, chocolate shavings
  • Tarteletta, mascarpone cream, strawberries, truffle honey

A big THANK YOU goes to La Giardiniera di Morgan for the warm cooperation and the generous provision of ingredients – all the vegetables, pesti and fine pickles that enhanced the evening came from their range.

This evening was not only a flavourful journey, but also an inspiring gathering of people with vision, attention to detail and true culinary passion. We are already looking forward to the next adventure in our series and say: Grazie & see you soon!

An experience with a repeat character: the number of participants was deliberately limited to guarantee the highest quality and personalised service. The result: enthusiastic guests, lively discussions and the desire for more.
