Team mizu-san transformed the Hotel Kai 36 in Graz into a place of culinary fascination, as the exclusive cookery course ‘Maki & More’ took participants on a journey into the world of Japanese cuisine under the attentive guidance and leadership of mizu-san owner Daniel.

After a brief introduction to the basics of sushi preparation, it was time for the first and perhaps most important step: the perfect sushi rice. We passionately explained, talked and exchanged experiences, and everyone was amazed at how easy it can be to achieve perfect results with the right tips and tricks.

Another highlight was the preparation of homemade sushi ginger and Nikiri soya sauce. These small details gave the sushi rolls an incomparable flavour and provided many moments of surprise for the participants.

Roll like the pros

Then came the moment everyone had been waiting for: the rolling of the first maki sushi. Under expert guidance, classic hoso-maki, California rolls and impressive futomaki were created. Each participant was able to give free rein to their creativity and the results were impressive – colourful, artistic creations that not only looked good but also tasted fantastic.

There was a relaxed, easy-going atmosphere during the course, with lots of laughter and trial and error. Daniel managed to convey even the most complex techniques in an accessible and understandable way so that everyone could be proud of their results at the end.

The grand finale

After almost five hours of intensive cooking and learning, the home-made sushi creations were tasted together and the rest taken home. Accompanied by discussions about the newly acquired knowledge and tips for at home, an unforgettable evening came to an end. Each participant not only took home a recipe booklet full of inspiration and a discount code for high-quality Japanese chef’s knives, but also the certainty and self-confidence that they will be able to conjure up impressive sushi creations in the future.

The X-mas Special ‘Maki & More’ was a complete success and a wonderful opportunity to immerse yourself in the fascinating world of Japanese cuisine. For the participants, it was the start of a new culinary passion – and certainly not the last sushi evening in their own kitchen.
