Maki und Mehr – Sushi for beginners
We recently held our popular sushi beginners’ course ‘Maki and more’ for an enthusiastic group. In a relaxed and creative atmosphere, we learnt the basics of the art of sushi together and ventured into the preparation of various delicacies.
The course began with the preparation of perfectly balanced sushi rice, which was refined with a homemade marinade – the centrepiece of every successful sushi dish. We then showed how to pickle fresh sushi ginger and prepare a sweet Nikiri soy sauce that gives every sushi creation that certain something.
One highlight was the preparation of a classic dashi, which we used to conjure up a savoury miso soup – an indispensable accompaniment to any sushi menu. The crowning glory was the rolling of hoso-maki, California rolls and sumptuous futomaki. Participants
learnt about different techniques and were able to give free rein to their creativity.
It was great to see how quickly the participants internalised
and enthusiastically incorporated their own ideas into their sushi creations. The recipes, tips and tricks they learnt will now help them to prepare sushi at home with pleasure and success.
This course was once again a wonderful opportunity to share the fascination of Japanese cuisine and at the same time create new culinary experiences.
